Banana Blueberry Beet Root Breakfast Cookies Leveled Up
Oh My. These cookies are the perfect meal prep, on the go breakfast to LEVEL UP your nutrition. They are healthy and I’m telling you, they are de.lic.ious. This recipe is easy to make vegan or gluten-free as well. I took this recipe up a notch by adding the super food, Beet Root powder (read about it here). Beet root powder has a mild, earthy flavor. You can’t really taste it in the cookie but it looks pretty and does offer some health benefits! Packed with wholesome ingredients, these cookies are not only irresistibly delicious but you will feel good about eating them plus they provide a range of health benefits, read below:


- Ripe Bananas and Pure Maple Syrup: The use of mashed ripe bananas and pure maple syrup adds natural sweetness to the cookies, eliminating the need for refined sugar. Bananas are an excellent source of fiber, potassium, and vitamins, while pure maple syrup contains antioxidants and minerals, making this combination a nourishing alternative.

Banana Blueberry Beetroot Breakfast Cookies Leveled Up

2 medium ripe bananas, mashed
1/2 cup pure maple syrup
1/4 cup coconut oil
2 tsp pure vanilla extract
1 egg (or egg sub)
1 cup whole wheat organic flour (or gluten free flour sub)
1/4 cup hemp seeds
1/4 cup chia seeds
1 heaping TBS beet root powder
1 cup rolled oats
1 tsp cinnamon
1 tsp baking powder
1/2 tsp sea salt
1 to 1 1/2 cups blueberries
1 cup walnuts, toasted
1/3 cup unsweetened shredded coconut (optional)
Directions
- Preheat oven to 350 degrees. In large bowl mash your bananas and then add remaining wet ingredients, give it a good stir.
- Next add your dry ingredients and fold into wet ingredients mixing well.
- Next fold in your blueberries and walnuts.
- Drop by heaping tablespoons onto a greased cookie sheet. Top with a sprinkle of shredded coconut and gently press in.
- Bake for 11-12 minutes. Allow to cool for a couple minutes then remove from pan onto a plate.
