1 cup whole wheat flour (organic, NON enriched)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 ripe banana
1/2 cup unsweetened almond milk or water
1 tbsp apple cider vinegar
1/2 cup fresh blueberries
1 tbsp coconut oil
Directions
- In a large mixing bowl, combine the whole wheat flour, baking powder, baking soda, and cinnamon. Whisk together until well combined.
- In a separate bowl, mash the banana until smooth. Add the almond milk and apple cider vinegar and whisk together.
- Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms. Fold in the fresh blueberries.
- Heat a non-stick skillet or griddle over medium heat. Add a little coconut oil to the pan.
- Use a 1/4 cup measuring cup to scoop the batter onto the skillet. Cook until bubbles form on the surface and the edges begin to dry out, then flip and cook for an additional 1-2 minutes until lightly browned.
- Serve the pancakes hot with additional blueberries, maple syrup, or other toppings of your choice.
